This week we're featuring PROOF's showcase of chilled reds and pairing them with some wildcard cheeses - unconventional cheeses that you've probably never seen or heard of.
Here's the lineup:
🍷 Müller-Ruprecht Rot (Pfalz, Germany)
🌶️ Paired with Alisios (Canary Islands)
Light-bodied, juicy, and herbaceous. Think chilled cherry juice with a wink. Alisios brings paprika-swept warmth and buttery texture for a seaside-meets-forest kind of harmony.
🍷 Angelot Mondeuse (France)
🐄 Paired with Coppinger (Sequatchie Cove Creamery, TN)
Dark fruit, cracked pepper, a little wild—this chillable red loves funk. Enter Coppinger: smoky, floral, with that alpine wash-rind swagger. Together, they’re flirty and feral in the best way.
🍷 Villa di Corlo Lambrusco (Emilia-Romagna, Italy)
🐄 Paired with Ubriacone
Fizzy, fruity, unapologetically fun. Ubriacone’s wine-soaked rind and firm, nutty interior are made to party with Lambrusco. A pairing that says: we came for the bubbles, we stayed for the cheese.
